Grease Management Equipment - good practice standards information

Inappropriate disposal of waste fat, oil and grease (FOG) to sewer can cause sewer blockages, and lead to pollution incidents. The Water Industry Act 1991 contains provisions to prevent substances from entering drains and sewers which may cause such issues. Any chosen grease management equipment should be an effective means of preventing FOG from entering the public sewer. Failure to adhere to these requirements can lead to enforcement, including cost recovery and prosecution.

Whilst it is a matter for you to decide which appropriate means of grease removal you install, when you are choosing a supplier of equipment, it is an indication of good practice that:

Passive grease traps are designed, installed, operated and maintained in accordance with the following standards pertaining to grease separators:

  • B.S. EN 1825- 1:2004 - Principles of Design, Performance and Testing, Marking and Quality Control. 
  • B.S. EN 1825- 2:2002: Selection of Nominal Size, Installation, Operation and Maintenance 

Grease removal units (GRUs) are designed in accordance with the following standard issued by the Plumbing and Drainage Institute:

  • Standard PDI*-G101:2017: Testing and Rating Procedure for Grease Interceptors (includes appendix of sizing and installation data). 

*Note: PDI is an association of American manufacturers of engineered plumbing drainage specialty products. Their G101:2017 standard is used as a reference in the UK in the absence of any British (BS) or European (CEN) equivalent standards.

It is strictly the responsibility of the Food Service Establishment to ensure that the equipment is installed by properly licensed professionals in accordance with all relevant standards.
